GRILLED MARLIN STEAKS WITH GRILLED VIDALIA ONIONS & A PINEAPPLE SALAD
4 Fresh Marlin steaks, about 6-8oz. each, 3/4 inch thick
2 Vidalia onions, skinned & cut in half
1/2 cup olive oil
1/4 cup balsamic vinegar
8 canned pineapple rings, reserve juice
Salt & freshly ground pepper to taste
2 tablespoons lemon juice
10 fresh basil leaves, finely chopped
Vegetable oil, for coating grill grates
Whisk together the olive oil and vinegar and marinate the marlin steaks and the onions for 30-60 minutes. Clean and oil the grill grates with the vegetable oil. Preheat your grill to med - high heat. Salt and pepper the onion, pineapple and marlin. Put the onion on first (they will take the longest to cook, about 12-15 minutes), turning every few minutes. Put the marlin and the pineapple on the grill next (reserve the remaining marinade). Grill the marlin and the pineapple about 3 minutes on each side.
Take remaining marinade and put in a saucepan with reserved pineapple juice and lemon juice, bring to a boil over medium – high heat (1 minute). Remove from heat. Coarsely chop grilled pineapple and onions and place in medium size bowl. Add the warm marinade and the fresh basil leaves and toss together. Spoon some over each of the grilled Marlin steaks. Serve with some steamed fresh green beans.
